In my quest to find healthy cookie recipes, I came across a great post about another favorite of mine that begins with “c” – coconut.
My typical use has been the stripped down form, but I’m excited to try the other suggestions that The Sweet Beet talks about in this post.
This doesn’t mean I am giving up on coconut cookies, however, and I think I’m going to try this coconut macaroon recipe in the near future.
